The best cookie bar recipe for little boos: Monster Cookie Bars
Trick or treat!
Mostly treats…because that’s the way we roll. These soft and chewy monster cookie bars are easy to make, and loaded with peanut butter, oats, and chocolate candies. Your little monsters will thank you! This monster cookie bar recipe is always a hit at Halloween because of the eyeballs, and the chopped candy bars make it an excellent choice for using up a surplus of Halloween candy. (Not that we know what that’s like. hehe!) 🙂
Sometimes you just need a quick treat you can whip up in a jif. This is that recipe! Make the dough, press it in a pan, and boom, it’s in the oven before you know it. We love anything “monster cookie” around here. That winning combination of peanut-buttery-goodness with melty chocolate and oats….mmm…what’s not to love? We’ve done a lot of testing on monster cookie recipes, but this is definitely one of our favorites.
The bars make great fall “thinking of you” gifts to neighbors and teachers because they don’t dry out easily and stand up well in packing. They freeze great, if they make it to the freezer (ours never get that far). And…if you get around to making a batch before the school bell rings, they’ll make you mom of the year. 🙂
Monster Cookie Mashup
Ingredients
- 12 Tbs Butter softened
- 1 c. Peanut Butter
- 1-1/2 c. Brown Sugar
- 2 Eggs
- 2 tsp. Vanilla Extract
- 1 tsp. Baking Soda
- 2 c. All Purpose Flour
- 2-1/2 c. Old Fashioned Oats
- 1/2 tsp. Salt
- 1/2 c. Mini M&Ms
- 1/2 c. M&Ms
- 1/2 c. Chocolate Chips
- 1/2 c. Chopped Chocolate Candy Bars
- Candy Eyes
Instructions

Preheat oven to 350 degrees F. Spray a 9x13 baking dish with cooking spray.

In a separate bowl, combine the dry ingredients: flour, oats, salt, and baking soda. Mix and set aside.

In the bowl of an electric mixer, combine the butter and peanut butter. Add in the brown sugar, and cream until mixture is light in color.

Add the eggs and vanilla to the cookie dough, mixing between each addition. Scrape down the sides of the bowl as needed.

Gradually add the dry ingredients until fully incorporated.

Mix the candies, chocolate chips, and candy bar pieces into the cookie dough. (Reserve some pieces for the top, if desired.)

Turn the cookie dough out into the prepared 9x13 baking dish, and press down to flatten the top. Gently press the candy eyeballs into the dough.

Bake cookie bars at 350 degrees F for 20-25 minutes, or until set. Cool completely, slice into bars, and enjoy!
