Berry Berry Crumble
Ingredients
- 12 oz Fresh raspberries
- 12 oz Fresh blueberries
- 1 Tbs Cornstarch
- 1/2 c White whole wheat flour
- 1/2 c Brown sugar
- 2/3 c Old fashioned oats
- 2/3 c Walnuts or Pecans chopped
- 2 tsp Cinnamon or to taste
- 6 Tbs Butter
- 2-3 Tbs Water or 100% fruit juice
Instructions
-
Preheat oven to 375 degrees F.
-
Wash berries. Add clean berries to a quiche pan or 9x9 baking dish. Sprinkle berries with cornstarch. Set aside.
-
In a large bowl, add remaining dry ingredients and mix to combine. Slice butter into small chunks and add to the dry ingredients. Using a pastry cutter, fork, or your fingers, work the butter into the dry ingredients until it resembles a coarse dough.
-
Layer the "dough" on top of the berries. Carefully pour the water (or juice) on top so it sinks to the bottom of the pan.
-
Bake Berry Crumble at 375 degrees F for 45-50 minutes until the dough has turned into a golden crust on top and the berries are hot and bubbly. Serve warm with vanilla ice cream. Yum.
Recipe Notes
Frozen berries can be substituted for fresh. If using frozen berries, use 2 Tbs cornstarch instead of 1 Tbs, and omit the water/fruit juice from the recipe.
