These gigantic, homemade ice cream cookie sandwiches are a big winner at our house every summer. We love them so much, they never last long. The kids enjoy helping with the cookie-making and assembly (sprinkles, sprinkles, sprinkles!), and it always makes me laugh to see their sticky smiles run through the yard after they’ve shared one of these enormous treats.
The secret that makes these homemade ice cream cookie sandwiches so delectable?
The cookie.
When it comes to summer treats for the family, I try not to get too fussy. This is the kind of recipe intended to be fun to eat, easy to make and, to quote my littlest, “nummy!”
But here’s the deal. The cookie to ice cream ratio is key in achieving the optimal Ice Cream Cookie Sandwich. Too much cookie and the nummy factor is off. Too much ice cream…same story (not to mention, a lot of additional squishy-squeezy mess). The cookie is important. Trust, foodie friends, trust.
Which cookie is the best for ice cream sandwiches?
Cookie recipes that work well in this recipe have more spread and are slightly under-baked. By themselves, they might look a little flat…but when you slather ice cream between two? Perfection. My favorite recipe for these sandwiches are Mom’s Classic Chocolate Chip Cookies.
Cookies that are thick or over-baked may freeze too hard and be tough to bite through. So, your favorite chocolate chip cookie recipe may not be the best choice for these sandwiches. My go-to Chocolate Chip Cookie recipe might forever be these Thick and Chewy Cookies from ATK. But, while they are delicious with a tall glass of cold milk, a thick cookie won’t be the best option here. For optimal “nummy,” go for the Mom’s Classic recipe.
The ice cream choice is all your own! Our favorite is vanilla bean ice cream, because it’s a classic pairing and doesn’t overpower those chocolate chip cookies. Super-premium ice cream in pints is a special treat, as is homemade ice cream. In the summer our freezer is hardly ever void of a container of vanilla bean, so that’s become our go-to. Your choice! Swap in your favorite ice cream flavors as you wish.
The chocolate dip and decorations are totally optional, of course. It’s a fun way to get the kids into the kitchen, and let them enjoy the process. If you’re in a rush, skip the step – the end result is still a good one.
A friendly warning to all of our health-conscious caregivers out there…one of these full-sized cookie sandwiches is the size of my toddler’s face. So, you may find yourself dividing the ice cream sandwiches into parts to share. (Or not.) 🙂 Totally up to you!
Gigantic Chocolate Chip Cookie Ice Cream Sandwiches
Ingredients
- 2 Cookies per sandwich Mom's Classic Chocolate Chip Cookies are PERFECT in this recipe
- 1/2 c. Ice cream per sandwich
Chocolate Dip
- 3/4 c. Dark chocolate chips
- 1 Tbs. Coconut oil
- Sprinkles, mini chocolate chips, M&Ms, coconut...stuff to decorate!
- Baking sheet fitted with waxed paper
Instructions

Scoop ice cream onto the flat (bottom) side of one cookie. Gently place second cookie on top, like a sandwich. When finished making the cookie sandwiches, place them onto a baking sheet and transfer them to the freezer. Freeze sandwiches several hours or overnight. Once ice cream freezes hard, they are ready for the chocolate dip!

In a small bowl, mix together the chocolate chips and coconut oil. Microwave in 30 second increments, stirring between, until the chocolate is melted and smooth.

Remove sandwiches from freezer, working with them one at a time to prevent them from melting too quickly. Dip half of the sandwich into the melted chocolate and top with your sprinkles (or other decorations). Set the dipped sandwich on the waxed paper until the chocolate has set. Then return the sandwiches to the freezer until you are ready for a treat!
